Tasting Notes – 2025 Garrison Brothers Cowboy Bourbon Review

Let’s taste it:

🛏 Rested: 15 minutes in a Glencairn glass

👉🏻 Color: Dark amber

👉🏻 Nose: Sweet brown sugar, rich burnt caramel, vanilla, sweet and spicy oak, hints of smoke and cedar, sweet dark cherries; alcohol vapor is noticeable, but less than expected for 146.4 proof; citrus notes after a few sips
👉🏻 Taste: Fairly sweet, but also tannins, dried tangy apricots and tart citrus, burnt caramel, brown sugar, vanilla, mild dry oak
👉🏻 Finish: Fading brown sugar, considerable white pepper spice, tannins, lingering black cherry soda, and tart orange citrus; dry wood; mild char; quite long; deep warmth

A Complex And Layered Bourbon

The nose of the 2025 Garrison Brothers Cowboy Bourbon is complex and layered, with sweeter, richer flavors up front, as well as noticeable oak and sweet dark cherries. The flavors evolve over time, with citrus notes appearing after a few sips, as well as mild cedar and smoke. In addition, while alcohol vapor is definitely present, it is nowhere near what I would have expected for the proof.

On the palate, the proof becomes somewhat more noticeable. If not from its strength, then from the characteristic sweetness and tannins that are often found in high proof pours. There is also a bit of an additional tanginess from dried apricots and tart citrus. The confectionary flavors are still present as well, but less evident than in the nose.

The long finish of 2025 Garrison Brothers Cowboy Bourbon is where the proof is most noticeable. The brown sugar sweetness fades, but there is still lingering fruit from black cherry soda and tart orange citrus. Considerable white pepper spice and tannins are now present. As expected, there is noticeable dry wood as well as mild char. In the end, I am left with a deep warmth.

What is quite interesting is how the wood notes changed over the course of the sip. They began in the nose as both sweet and spicy oak along with a touch of cedar. However, they transitioned to mainly a dry wood character in the finish. Also, the mild smokiness in the nose became a more characteristic char and ash in the finish.

Bottle and Glencairn - 2025 Garrison Brothers Cowboy Bourbon

2025 Garrison Brothers Cowboy Bourbon Delivers More Than Just Proof

Needless to say, the 2025 Garrison Brothers Cowboy Bourbon is quite the pour. What’s most surprising is that in spite of the high proof, this bourbon has plenty of rich confectionary notes, as well as sweet and tart fruit, along with the flavors that would otherwise be expected at this high a proof. For my palate, this is a delicious bourbon. If you are a fan of full flavors and are not averse to a little heat and spice, then this is one that you will definitely want to try! Have you tried the 2025 Garrison Brothers Cowboy Bourbon? What did you think? Cheers!🥃
