About The Bardstown Bourbon Company Discovery Series

Bardstown Bourbon Company’s Discovery Series is all about blending. It’s also about variety and innovation. The first, second and fourth batches were all blends of Kentucky bourbons, but the other batches have been quite different. They haven’t all been bourbons, either. A few recent batches were blended whiskeys, adding ryes from Indiana and corn whiskey from Canada into the mix. The most recent release, the Discovery Series 10, is a blend of straight bourbon whiskeys from a variety of different distilleries and states.

Bardstown Bourbon Company Is About Transparency

Bardstown Bourbon Company has always been very transparent in everything that they do. Therefore, the mash bills and percent composition of all of the component whiskeys in each Discovery Series blend are right there on the label. The distilleries themselves are not listed, often due to nondisclosure agreements, however a quick Google search can often decipher the code. Nonetheless, the source of some of the components often remain a mystery.

The bourbons in the Discovery Series 10 are list in the label photo. The mash bills for the whole series are also listed on the Bardstown Bourbon Company web site. However, a few things stand out. Like others in the Discovery Series and in some of Bardstown Bourbon Company’s other blends, Discovery Series 10 uses bourbons from multiple states. Nonetheless, 88% of the bourbons in this blend came from Kentucky. Living in Kentucky myself, a high Kentucky Bourbon component is something that I like to see. That’s not to say that I don’t appreciate the excellent whiskey made in many other states as well; I definitely do. The remainder of the bourbons came from Georgia and Tennessee, at 10% and 2%, respectively.

Discovery Series 10 Contains Well-Aged Bourbons

The Discovery Series has been Bardstown Bourbon Company’s premium blend since its inception. Therefore, the component bourbons tend to be fairly well-aged. This blend is no exception, with bourbons ranging in age from six to thirteen years, with the vast majority of the components being nine years old, and older.

Tasting Notes – Bardstown Bourbon Company Discovery Series 10 Review

Let’s taste it:

? Rested for 15 minutes in a Glencairn

??Nose: Mildly sweet, with dark stone fruits like plums and cherries; leather; mild rye spices; dried apricots; rich brown sugar; soft caramel; pine & subtle dry oak; hint of doughy, buttery sugar cookies up front; moderate alcohol
??Taste: Dark cherries, mild brown sugar and simple syrup sweetness; light, sweet caramel; dry oak and some tannins
??Finish: Leather, white pepper, dry oak; lingering dark cherries and mild sugary sweetness; fairly dry overall with some tannins and crescendoing white pepper spice that builds on my tongue; mild char and smoke towards the end; long, with a moderate burn

Bardstown Bourbon Company Discovery Series 10 Bourbon has a flavor profile that I would expect from a premium bourbon with the majority of its components being from Kentucky and aged 9 years or older. Those include older barrel flavors like dark stones fruits and leather, which mix nicely with rich brown sugar, pine and caramel. The spice that builds in the finish is a pleasant complement to the richer flavors up front. The dryness that develops is a tad surprising, but also a factor of its age. It is likely tempered a bit by some of the younger components.

Conclusion

Overall, Bardstown Bourbon Company Discovery Series 10 is a delicious bourbon. For me, it is best enjoyed neat and sipped slowly, allowing the long finish to recede. But, I encourage you to drink it any way that you like. If a bourbon with a mature, rich flavor profile, complemented by white pepper spice and a fairly dry finish is to your liking, then definitely give Bardstown Bourbon Company Discovery Series 10 a try! Cheers!?
