Boone County Toasted Cask Finish is the latest release from Boone County Distilling Co. This bourbon starts with their fully matured 5 year old Small Batch Bourbon. Then, it is finished in toasted barrels for 3 months. Unfortunately, I do not know any more specifics than that. Although, I do know that their small batch bourbon is distilled by MGP and has a mashbill of 75% corn, 21% rye & 4% malted barley. 1120 bottles were produced. As an aside, last fall Boone County released their Pot Still Bourbon, which is a 5 year old bourbon that they distilled on site.

Tasting Notes – Boone County Toasted Cask Finish Bourbon Review

Let’s taste it:

🛏 Rested for 15 minutes in a Glencairn

👉🏻Nose: Honey, vanilla, caramel, marshmallow, baking spices, anise, spearmint, cedar; light fruit like cherries and apples; noticeable moderate alcohol
👉🏻Taste: Full bodied and syrupy; oak, caramel, vanilla, honey, anise, cherry & barrel char
👉🏻Finish: Flavors continue and a woodiness with oak, white pepper, barrel char and cigar ash grows and lingers; long finish with a moderate burn

Boone County Toasted Cask Finish leads off with a powerful, but warming, nose with loads of flavor. Sweet vanilla, marshmallow, caramel and honey are up front, but baking spices, with noticeable anise and spearmint are not far behind. There’s some fruit in there too, but it doesn’t come out until I am fully acclimated to the other flavors. The taste is a bit more dry than the nose, although many of the nosing flavors continue. Later on more of a woodiness develops, with some white pepper, barrel char and cigar ash (in a good way) that continue into the finish and linger, with the spice hanging on til the end.

Boone County Has Another Winner!

I am very much enjoying this bourbon, or maybe more correctly, bourbon finished in toasted barrels. It has opened up quite a bit over one day, and I expect it to continue to evolve. Looks like Boone County Distilling Co. has another winner on their hands!
