Larceny Barrel Proof Launches in 2020
Back in 2020, Heaven Hill Distillery introduced Larceny Barrel Proof as the first line extension of Larceny Bourbon. If you are not familiar with it, Larceny Bourbon is Heaven Hill’s wheated bourbon. What that means is wheat is used as the secondary grain. What’s a secondary grain, you might ask? Well, bourbon has to made from a mash bill that contains at least 51% corn. To clarify, there may be a greater corn percentage than just 51%; that’s just the minimum needed to be classified as a bourbon. Other than that, there is usually a secondary or “flavoring grain”, which is most commonly rye, and then usually a small amount of malted barley, to provide enzymes.
Occasionally, grains other than rye will be used as the secondary grain. Wheat is the next most common choice. However, after that, the sky is the limit. As long as it is a grain, it can be used to make whiskey.
As its name implies, this version of Larceny Bourbon is bottled at barrel proof. It is also non-chill filtered. Ironically, or not so much so for those trying to buy it, Larceny Barrel Proof Bourbon had already won a Double Gold at the 2019 San Francisco World Spirits Competition prior to entering the market. What a way to make a debut!

Tasting Notes – Larceny Barrel Proof Bourbon Batch C922
🛏 Rested for 15 minutes in a Glencairn
👉🏻Nose: Lightly burnt caramel, vanilla & brown sugar; there’s dark plum, berry and maybe even a little raisin, jam in the background; the alcohol is noticeable
👉🏻Taste: Burnt caramel and brown sugar, some butterscotch, and dry oak. The dark stone fruit and sweet berry jam are in the background, providing complexity. Those flavors give way to some dryness, char and wood which develop later on
👉🏻Finish: The flavors continue into the finish where capsaicin spice builds. A lot. There’s some syrupy sweet brown sugar, cookie dough, and a hint of sweet dark plums lingering into the long finish with a bit of a burn, too
Confectionary Flavors At Barrel Proof
The nose, once it has a chance to open up a little and lose some alcohol, has a rich lightly burnt creme brûlée like character, with plenty of brown sugar and vanilla. But there is some darker fruit in there as well, but it is in the background, after you get past the alcohol and pastry flavors. Don’t breathe in too deeply at first, though, or you’ll get a snout full of fire! The taste brings more burnt caramel and brown sugar, still with some darker stone fruits in the background. And some cookie dough towards the and into the finish. Seems out of place, but it’s true. Gradually, the flavors are dominated by spice in the finish, with some char and lingering syrupy sweetness and subtle fruit. The proof makes itself quite known in the finish.
Summing It Up
If I had to sum Larceny Barrel Proof Bourbon Batch C922 up in one line, I would have to say “vanilla creme brûlée with a few dashes of dark plum and berry sauce, with a hearty habanero chaser”. It’s an interesting one, because the more subtle flavors don’t really become noticeable until I have acclimated to the alcohol and much stronger primary flavors.
