A Bourbon Finished With Cacao Nibs
Bourbon Rabbi Cacao Finished Bourbon is a Kentucky Straight Bourbon Whiskey finished with cacao nibs.
According to the brand: “This bourbon finished with cacao delivers an irresistibly rich and velvety flavor profile. Perfectly balancing the warmth of bourbon with the luxurious depth of dark chocolate, it’s a decadent choice for those seeking an indulgent and unique tasting experience.”
While the bourbon’s name on its label implies that it was finished in cacao barrels, cacao nibs are actually added directly to the bourbon and left in the barrel for 45 to 60 days prior to dumping.
The bourbon itself is believed to be distilled at Green River Distilling in Owensboro, Kentucky. Bourbon Rabbi Cacao Finished Bourbon is released as a single barrel product, a necessity due to the production process. Barrel ages vary, with earlier releases around four years old and more recent barrels closer to six years.

🛏 Rested: 15 minutes in a Glencairn
👉🏻 Nose (Ed): Simple syrupy sweetness, sweet cherry candy, light floral notes, chocolate, light toffee, vanilla, mild rye spices, hints of oak and marshmallow
👉🏻 Nose (Dean): Chocolate, plum morphing to prune, coffee and small bit of marshmallows
👉🏻 Taste (Ed): Fairly sweet; chocolate & sweet cherry, like a cherry Tootsie Pop; caramel, black tea, rye spices
👉🏻 Taste (Dean): Mexican chocolate, coffee, sweet tea, chocolate-covered cherries with sweet filling, baking spices
👉🏻 Finish (Ed): Sweetness continues but diminishes; becomes mildly dry; mild black pepper spice, chocolate; fairly long with lingering chocolate and sweetness with mild spice
👉🏻 Finish (Dean): Mid-length finish, chocolate, a little dry
Chocolate, Cherry, and Spice in a Dessert-Style Bourbon
While our tasting notes differed somewhat, Dean and I both had a similar impression of this bourbon. We both enjoyed it quite a bit!
- Dean: It’s a really nice pour, with beautiful flavor, nice layers and hits all around.
- Ed: A nice combination of sweetness, chocolate, cherries, and spices. The taste is a bit like a cherry Tootsie Pop. It’s a great breakfast or dessert pour!
