Background
The Brush Creek Distillery, which opened in 2019, is a craft distillery located within The Farm at Brush Creek in Saratoga, Wyoming. The Farm is a resort with a ranch, a greenhouse, a bakery, a creamery and, of course, a distillery. It also has a wine cellar with approximately 30,000 bottles and a Spirit Vault with rare and vintage spirits. The distillery makes gin, vodka, bourbon and rye, but also blends products sourced from other distillers.
The Specifics
Brush Creek Bourbon is a non-chill filtered, four-grain product, featuring a blend of 4–13 year old straight bourbons sourced from distilleries in Kentucky, Indiana, and Tennessee. Each batch is cut to proof with snowmelt water captured on-site from the nearby Snowy Mountain Range.

Tasting Notes – Brush Creek Straight Bourbon Whiskeys
Let’s taste it:
(tasted together by both Dean and Ed)
🛏 Rested for 15 minutes in a Glencairn
👉🏻Nose: Oak, sweet with pears, honey, tangy sweet apple cider, caramel, light smoke, marshmallow; green tea and orange peel linger underneath; alcohol vapor appropriate for the proof
👉🏻Taste: Fairly sweet, white grapes, green apples, plums and honey or simple syrup; caramel; rye spices like cloves; a hint of white pepper and green tea towards the end
👉🏻Finish: Capsaicin spice; increasingly dry; slight barrel char; medium long
Brush Creek Bourbon is initially fruit forward in the nose, with pears and tangy sweet fresh apple cider. There’s oak, caramel, light smoke and marshmallow, too. Later on, after a sip or two, we notice some tart orange peel, as well as subtle earthiness from green tea leaves. The alcohol vapor is appropriate for the proof.
The taste is fairly sweet, with honey (Dean) or simple syrup (Ed), fresh apples, white grapes, plums and light caramel; later on rye spices, like cloves, become more noticeable. There’s a subtle earthiness from green tea and a hint of white pepper spice, as well. Cloves continue into the finish, which becomes increasingly dry. There’s a moderate capsaicin spice, with slight barrel char later on. The finish is medium long, and we are left with a pleasant warmth.
Similarities and Differences
Dean and I overall had a reasonably similar impression of the Brush Creek Bourbon, although we did perceive some different flavors, mainly in the nose. Whereas Ed found the nose to be fairly sweet and more fruit forward with honey, caramel and some earthiness and tart orange later on, the dominant flavors that Dean noted were oak, marshmallows, light smoke and citrus at the end. We both found fruit in the taste, for Dean those leaned towards white grapes, plums and green apples, whereas for Ed, the sweet apples were dominant. Ed also noted caramel and rye spices, mainly cloves. We both thought the finish became fairly dry, with either white pepper or capsaicin spice.
Conclusion
Overall, we very much enjoyed Brush Creek Bourbon. If you enjoy a well-made four-grain blended bourbon sourced from multiple states with sweet fruity notes, some spice and a drying finish, then you’ll want to give this bourbon a try. Have you had it? What did you think? Cheers!🥃
