Chicken Cock History

The Chicken Cock brand was originally established by James Miller in Paris, KY, in 1856. However, it was not known as Chicken Cock at the time; the original brand name was “Miller’s Old Bourbon”. Unfortunately, just 4 years after opening his distillery, James Miller passed away. With the distillery under new ownership, the brand’s name was changed to “JA Miller’s Chicken Cock Whiskey.” Eventually, after changing hands a number of times and ultimately becoming a blended whiskey, the brand was discontinued in the 1950’s.

Chicken Cock Whiskey Is Revived!

The Chicken Cock brand was revived in 2017 by Grain and Barrel Spirits. Currently, their whiskeys are produced via Bardstown Bourbon Company’s Collaborative Distilling Program. Additionally, in 2024, Chicken Cock Whiskey opened their brand home, Circa 1856, in Bardstown, Kentucky.

Tasting Notes – Chicken Cock Small Batch Bourbon Review

Let’s taste it:

🛏 Rested for 15 minutes in a Glencairn

👉🏻Nose: Tan caramel, dark cherries and plums, brown sugar simple syrup, black tea leaves, rye spices, mild dry oak; alcohol vapor appropriate for the proof
👉🏻Taste: Light caramel, simple syrup, dark cherries, black tea, mild char
👉🏻Finish: Growing white pepper spice, increasingly dry; mild dry oak and char; long with a pleasant warmth, lingering spice and dark cherries.

The nose of Chicken Cock Small Batch Bourbon has a mild sweetness, with tan caramel and brown sugar simple syrup. In addition, there are dark cherries and plums, as well as black tea leaves, which rise and fall in intensity. Mild dry oak and hints of rye spices round out the flavor profile, and become more noticeable with time. The alcohol vapor is appropriate for the proof.

The taste is fairly sweet, with light caramel, simple syrup sweetness with a syrupy viscosity, and dark cherries. Black tea leaves and mild char appear later on. Those flavors continue into the long finish, where there is a growing and lingering white pepper spice. Eventually, the mouthfeel becomes increasingly dry, the sweetness fades, and mild dry oak, lingering spice and hints of cherries remain. In the end, I am left with a pleasant warmth.

Conclusion

Chicken Cock Small Batch Bourbon is a very enjoyable, easy to drink, whiskey. If your tastes favor a bourbon with classic bourbon flavors, that begins fairly sweet and turns drier and spicier later on, then you’ll want to give Chicken Cock Small Batch Bourbon a try.
