Background – Copper & Cask Small Batch Series No. 014 8 Year Double Oak Bourbon Review
Copper & Cask was founded in 2021 and focuses on sourcing aged whiskey from a variety of distilleries. Barrell Master Stephen Corrigan joined the company in 2022 and now leads whiskey production. While a majority of their sourced barrels come from Indiana, Copper & Cask also works with whiskey from Kentucky and Canada. After sourcing, barrels are further aged in locations including Kentucky, Texas and Florida.
This 8 Year Double Oaked Bourbon is part of Copper & Cask’s Small Batch Series. It is a limited release composed of a 19-barrel batch of both low-rye and high-rye bourbons, aged a minimum of eight years before being re-casked into new American Oak Wave Stave barrels for an additional finishing period.

Summary
(Craig) – The immediate impression of Copper & Cask Smal Batch Series No. 014 8 Year Double Oak Bourbon on the nose is warm, toasted oak, followed by baked plums and a blend of spices—most notably pepper and clove. This was my first sip of the day and the alcohol presence was certainly noticeable at that point.
With my palate warmed, the second sip revealed far more nuance and layers, bringing out enjoyable notes of tobacco and dark roast coffee. Continued exploration uncovered flavors reminiscent of Olallieberry cobbler, complete with a burst of sugary crust, like the kind my grandmother in Oregon used to bake. There was also a soda-like note—perhaps Dr. Pepper or even cherry cola. I’m no longer much of a soda drinker, so I can’t say with complete certainty.
Subsequent sips were dominated by butterscotch. Think of those classic butterscotch candies wrapped in twisted plastic from childhood, melted down into a rich syrup, and you’ll have a clear picture. The ethanol is not very noticeable on the nose considering the proof point.
(Cynthia) – I went into this tasting without a warm-up. The first impression was filled with overwhelming heat. After a few minutes, the follow-up sips presented a delicious experience. This bourbon enveloped my palate with a silky, full-full bodied texture, releasing deep flavors of honey, espresso and molasses.
During this review, the weather outside was foggy and the temps ran in the low 40’s. It was a perfect day for this decadent pour. All I needed to add to make this a cozy experience was to put on a pair of fuzzy slippers and hit the remote to turn on the fireplace. The further along I went with this sample, deeper flavors made their presence known and blended seamlessly, similar to a fresh baked spiced cookie with a hint of liquid smoke.
Conclusion
(Craig) – Wow, Copper & Cask Smal Batch Series No. 014 is a very well done and delicious double oaked bourbon. I really enjoyed all the various flavors as well as the fairly long finish. I’m not sure if the wave stave barrels have anything to do with the layers this bottle offers, but if they do then more producers should take advantage of this barrel type!
(Cynthia) – This bourbon surprised me in the best way. The first sniff gave off deep earthy and rich woodsy notes, not that damp camping funk you sometime get. After the first sip, the liquid rolled into my mouth smoother than I expected. It started off sweet with touches of molasses and honey, then it shifts into a darker coffee and espresso tones. The entire experience felt well balanced and layered. This is a bottle I would keep on my shelf.
