A Limited Release Honoring America’s 250th

Copper & Cask introduced Wave That Flag Double Oak Bourbon as one of two limited-edition releases commemorating America’s 250th anniversary. The nine-year-old bourbon was limited to 3,000 bottles and bottled at 117 proof.

As part of the release, Copper & Cask pledged $1 from every bottle sold to the Arcadia Center for Sustainable Food & Agriculture’s Veteran Farmer Training Program. Copper & Cask Barrel Master Stephen Corrigan has worked with the organization for almost 15 years, including helping launch the program and providing hands-on training since 2015. The program helps veterans transition into careers in agriculture.

Four Toast Levels and a Wave Stave Finish

Copper & Cask Wave That Flag began as a blend of low-rye bourbon barrels with a mash bill containing 21% rye. Most of the component barrels were aged in Kentucky. After nine years of aging, the bourbon underwent secondary finishing in new American oak ZAK Cooperage Wave Stave Char #1 barrels using four different toast levels.

Wave stave barrels generally use a contoured or grooved interior to increase the surface area available for contact between the whiskey and oak. ZAK Cooperage has not published the specific construction details for the barrels used for this release.

A Rich Nose Gives Way to Oak and Tannins

The nose of Copper & Cask Wave That Flag is viscous and rich, with confectionery notes of vanilla, dark toffee and brown sugar, as well as dark cherries. Those flavors are balanced by sweet oak and mild tannins. A bit surprisingly, there is a fairly rapid transition on the palate. The mouthfeel becomes drier, with some lingering sweet caramel, but otherwise sweet oak, dry wood and tannins are dominant. The finish becomes drier still, with growing white pepper spice, lingering hints of dark cherries and tannins. Mild char and dry wood are more noticeable as the finish progresses, with lingering spice and fairly pronounced dryness in the end.

Copper & Cask Wave That Flag Double Oak Bourbon has an interesting transition of flavors. The rich barrel flavors on the nose are likely derived from the bourbon’s nine years of aging, as well as the effects of the finishing barrels. For secondary finishing, Copper & Cask used ZAK Cooperage Wave Stave Char #1 barrels with four different toast levels. The wave stave barrels also likely account for the progressively increasing dryness, tannins and spice later on.

An Enjoyable Pour for Oak-Forward Bourbon Fans

Overall, Copper & Cask Wave That Flag Double Oak Bourbon is an enjoyable pour. The nose sets the stage for something rich, although there is an “about-face” on the palate that continues into the finish. This is definitely a bourbon for those who are not afraid of some oak and tannins. If this transition of flavors is something that you enjoy, then you will definitely want to give this bourbon a try!
