About the World Whiskey Society

The World Whiskey Society is an organization that searches for exceptional barrels to share with whiskey lovers around the world. Through both sourcing and finishing—often in unique secondary casks—they aim to deliver distinctive, limited offerings for those seeking something special.

Introduction

This bourbon is made with a less common mash bill of 78% corn, 13% rye, and 9% malted barley. This recipe is used by several distilleries, including Jim Beam and Green River, though it’s not as common as some of the better-known Kentucky mash bills.

Tasting Impressions – Doc Holliday 8-Year Oloroso Sherry Cask Finish Bourbon Review

Craig: On the nose, I enjoyed the multiple layers dominated by sweet oak, tobacco, and leather. On my first sip, I immediately noticed the spice. Subsequent tastes continued with the black pepper spice and opened up to less obvious notes of caramel and tobacco. I think my palate was off today—the spicy notes dominated my experience with this pour. The taste never smoothed out or opened up for me. A follow-up pour of a regular favorite proved me right; it also tasted spicier and had more of a one-note flavor profile than usual.

Cynthia: The nose is a bourbon classic of corn and nuts with a touch of tobacco. The palate is rewarding, opening with a burst of spice at the front. Progressively, the taste becomes velvety sweet with dark chocolate and dried fruit that balance out the initial spice, bringing the Oloroso Sherry finish into the spotlight.

Conclusion – Doc Holliday 8-Year Oloroso Sherry Cask Finish Bourbon Review

Craig: Overall, my “off” palate limited my enjoyment of this offering, though from the nicely layered notes on the nose, I know it had more to offer. We shared a small pour with a friend who agreed with Cynthia that there was more depth than I experienced. I look forward to trying it again in the future if I get the chance.

Cynthia: This bourbon is as complex as a gourmet dark chocolate bar with nuts, cranberries, and a sprinkle of chili powder on top—just enough spice to pique your taste buds without overwhelming them. This one’s a winner for me.
