Hazelbaker

Some people may recognize Hazelbaker as the family name behind Prohibition Craft Spirits (PCS Distilling Company), the makers of NULU Whiskeys. The latest release from PCS is a bit of a change of pace from the NULU line. It is a Bottled-In-Bond bourbon, distilled in Kentucky from a high rye mash bill, and bottled at the required 100 proof. The new Hazelbaker Bourbon branding includes a completely different label design from the NULU Whiskeys, as well as a new bottle shape. Hazelbaker Bottled-In-Bond Bourbon will first be released in Kentucky, although there may be some bottles headed elsewhere. So, at this point, you’re probably wondering, “what’s it like?”

Tasting Notes – Hazelbaker Bottled-In-Bond Bourbon Review

Let’s taste it:

🛏 Rested for 15 minutes in a Glencairn

👉🏻Nose: Sweet dark cherries, caramel, rye spices, vanilla, brown sugar; hint of cinnamon; touch of dry oak and cedar; dark cocoa later on; alcohol appropriate for the proof
👉🏻Taste: Simple syrup sweetness, sweet dark cherries, caramel
👉🏻Finish: Growing white pepper spice, tannins, light barrel char & dry oak; lingering sweet dark cherries; long; pleasant warmth

The nose has noticeable fruit from sweet dark cherries and cherry candy, but also rye spices and mild cinnamon. There are also some confectionery-like notes from brown sugar, vanilla, and caramel. Mild dry oak, cedar and a hint of dark cocoa round out the fairly complex nose. The taste is quite sweet with thick simple syrup, light caramel and lingering sweet dark cherries. as well as a touch of sugar cookie. The finish does a bit of an about face. There are still some lingering sweet cherries and fading simple syrup, but the flavors are now dominated by white pepper, and increasing dryness with mild barrel char, tannins and dry oak. It’s a fairly long finish, with a pleasant, moderate warmth.

Conclusion

Hazelbaker Bottled-In-Bond Bourbon is a very enjoyable pour. It has the classic Kentucky flavors that I would expect, but with a bit of added complexity. The growing dryness in the finish is a nice contrast to the syrupy sweetness of the taste, and readies me for my next sip.

It’s nice to see the maturation of Prohibition Craft Spirits, and the addition of this Bottled-in-Bond bourbon is a logical next step. I do find it interesting, however, that they are keeping the Hazelbaker brand separate from NULU Whiskey. It appears nowhere on the NULU Whiskey/PCS website, and it even has its own Instagram account – @hazelbakerbib_.
