The Second Year of True Grain-to-Glass Whiskeys from Heaven Hill Distillery
The 2025 Heaven Hill Grain to Glass Wheated Bourbon is the third whiskey in the second year of the distillery’s Grain to Glass project. The series showcases the complete whiskey-making process from seed to bottle and highlights the collaboration between three family-owned businesses. This bourbon features locally grown grains sourced from Peterson Farms, including this year’s corn—developed in conjunction with Beck’s Hybrids—Beck’s 6225 corn and soft red winter wheat. Aged more than six years at Heaven Hill’s Cox’s Creek rickhouse site, it is non-chill filtered and bottled at 106.6 proof (53.3% ABV). Proceeds from this limited-edition release support Farm Rescue, a nonprofit that assists farm families in times of crisis.

Tasting Notes – 2025 Heaven Hill Grain to Glass Wheated Bourbon Review
Let’s taste it:
🛏 Rested: 15 minutes in a Glencairn
👉🏻 Nose: Mildly sweet dark cherries, light oak, medium dark caramel, a touch of tart orange citrus, a hint of wintergreen, and a slight dry grain character. Alcohol vapor is appropriate for the proof.
👉🏻 Taste: Moderately sweet with a light syrupy feel; cherries, sweet caramel, mild oak, and growing black pepper.
👉🏻 Finish: Moderate black pepper spice, mild tannins and dry oak, hints of grape soda, and mild barrel char, later on. Fairly long with lingering black pepper, grape soda, and char, leaving a pleasant warmth.
Summary – 2025 Heaven Hill Grain to Glass Wheated Bourbon Review
This bourbon offers a very nice mix of sweet fruit and caramel up front, with a touch of tart citrus and oak rounding it out nicely. The palate follows suit, becoming a bit sweeter with a light syrupy character. As the finish develops, it grows spicier with a touch of barrel char, while the fruit turns slightly toward grape soda—adding an enjoyable contrast. The relatively mild, yet noticeable, oak throughout may be a little more prominent than expected for its age, but it balances well with the other flavors.
Conclusion
Overall, 2025 Heaven Hill Grain to Glass Wheated Bourbon is a very enjoyable and easy-to-drink pour that should appeal to those who enjoy an initially fruit-forward bourbon that becomes sweeter on the palate and turns a bit spicier toward the end.
