A New Series From Heaven Hill

The Grain to Glass Collection represents a whole new line of whiskeys from Heaven Hill Distillery. According to the distillery, the new series is a “collection of Kentucky Whiskeys that highlight Heaven Hill’s long-standing commitment to quality, sustainability, and craft.”

Heaven Hill is a family owned company that was founded in 1935. To create this new line of whiskeys, they were looking to partner with similar like-minded family businesses. Thus, they have partnered with Beck’s Hybrids, of Atlanta, Indiana, to develop the perfect seeds, and Peterson Farms, of Loretto, KY to grow the crops. Needless to say, Heaven Hill takes care of the distilling, which is done at their Bernheim Distillery, in Louisville, KY.

The Details

The Grain to Grass Collection uses mash bills which are entirely new for Heaven Hill. For the Heaven Hill Grain to Glass Wheated Bourbon, the Mash Bill is 52% corn, 35% wheat and 13% malted barley. The corn hybrid is Beck’s 6158, a non-GMO corn with a high starch content and well-suited to growing in Central Kentucky. The corn is grown in two fields, both within 50 miles of Bardstown. In fact, visitors pass one of the fields every day. It is located directly across from Heaven Hill’s bottling facility and rickhouse on their Bardstown campus.

Tasting Notes – Heaven Hill Grain to Glass Wheated Bourbon

Let’s taste it:

🛏 Rested for 15 minutes in a Glencairn

👉🏻Nose: Dark cherries, sweet apples, sweet brown sugar, sugar cookies, toffee, mild dry oak & a hint of orange peel; moderate alcohol, but less than expected for the proof
👉🏻Taste: Syrupy sweet brown sugar, caramel, dry oak, tart orange peel; developing black pepper
👉🏻Finish: Growing black pepper spice. Mild barrel char, dry oak and orange peel. Increasingly dry later on. Very, very long.

The nose of Heaven Hill Grain to Glass Wheated Bourbon is quite sweet and rich, with dark brown sugar, toffee notes and sugar cookies. There are also noticeable dark cherries, sweet apples, and a bit of dry oak and tart orange peel, too. However, the strength of the alcohol vapor does not at all betray this bourbon’s high proof.

The taste starts off quite sweet, with loads of brown sugar. In addition, there is a bit of dry oak, sweet caramel, and hints of tart orange peels, too. The mouthfeel is full and almost syrupy. Later on, black pepper appears.

In the long finish, there is increasing black pepper spice, but it never becomes overwhelming. Barrel char is more noticeable, as the mouthfeel grows increasingly dry. A mild sweetness remains, along with some tart orange peel, as well. The flavors linger for quite some time, seemingly never to end. As the finish finally fades, remnants of pleasant smoky barrel char remain on my tongue.

Summary

Overall, in spite of its full, rich flavors, Heaven Hill Grain to Glass Wheated Bourbon drinks below its 121 proof. It starts off rich, with confectionary like flavors and fruit, yet still has hints of oak, citrus and spice, creating a pleasant complexity. The sweetness in the taste initially is a bit of a surprise, but soon the flavors change, becoming more dry and spicy, with a nice touch of char and dry oak.

Conclusion

I am a fan of wheated bourbons, and I especially love the flavors that become evident in them at higher proof. Heaven Hill Grain to Glass Wheated Bourbon delivers all that I would expect, with a richness and complexity that is right in my “wheelhouse”, so to speak. If those are flavors that you enjoy, too, then you’ll want to give this bourbon a try! Cheers!🥃
