Coy Hill Barrelhouse 8 Begins With Jack Daniel’s Standard Mash Bill

Jack Daniel’s Coy Hill Barrelhouse 8 starts with Jack Daniel’s traditional Tennessee Whiskey mash bill of 80% corn, 12% malted barley, and 8% rye. After distillation, the whiskey was charcoal mellowed and entered into new, charred American white oak barrels in September of 2013. It then matured on the fifth and sixth floors of Coy Hill Barrelhouse 8. Jack Daniel’s does not provide the exact date that this whiskey was bottled. However, if we assume it remained in the barrel until fairly recently, it will have aged 10-11 years.

According to the distillery, The Coy Hill barrelhouses are at the highest elevation on the Jack Daniel Distillery campus. This results in a unique environment, including drastic temperature swings, that have a significant effect on the aging whiskey. So, 10-11 years in the upper floors of a rickhouse in this location really would subject the whiskey to a markedly different aging experience than standard Jack Daniel’s Tennessee Whiskey.

Bottled at Barrel Strength

After maturation and blending, this whiskey was then bottled at barrel strength with proofs ranging from 122 to 137.5. The sample I reviewed was at the upper end of this range, being 134.7 proof.

Tasting Notes – Jack Daniel’s Single Barrel Special Release Coy Hill Barrelhouse 8 Tennessee Whiskey Review

Let’s taste it:

🛏 Rested for 15 minutes in a Glencairn

👉🏻Nose: Tart orange, brown sugar, medium burnt caramel; dry oak and balsa; dark cherry candy; vanilla; alcohol vapor fairly hot, as expected for the proof
👉🏻Taste: Tart orange, brown sugar, dark caramel, dry oak, balsa wood
👉🏻Finish: Dark cherry; tart orange; white pepper increases and lingers; brown sugar sweetness gradually fades; dry oak; barrel char and tannins later on; increasingly dry; long; deep warmth

In addition to its very long name, Jack Daniel’s Single Barrel Special Release Coy Hill Barrelhouse 8 Tennessee Whiskey has a lot going on! The nose is complex, with sweet brown sugar, vanilla and medium burnt caramel, but also contrasting tart orange, dry oak and balsa wood. In addition, there’s some sweet dark cherry candy thrown in for good measure. The alcohol vapor is noticeable, as would be expected from this whiskey’s 134.7 proof, but it is not overbearing.

The taste brings many of the flavors from the nose, particularly tart orange, brown sugar, dark caramel, dry oak and balsa wood. The flavors rapidly evolve in the finish, where dark cherry candy has an encore, brown sugar remains, but gradually fades, and tart orange lingers. White pepper develops and rises, but overall, there is increasing dryness later on, with barrel char, tannins and the omnipresent dry oak. The finish is quite long, with a pleasant warmth, befitting this whiskey’s high proof.

This is not your grandfather’s Jack Daniel’s. And, if memory serves me, it isn’t your last bottle of Coy Hill, either. Those 10-11 years of aging in the fairly harsh environment of the upper floors of the Coy Hill Barrelhouse 8 have resulted in quite the complex and boldly flavored whiskey. If you are a fan of rich, dark flavors, with spice, syrupy sweetness, dryness, tannins, citrus and plenty of oak, then this may be just the whiskey for you!
