                      Wilderness Trail Distillery is definitely one of my favorite Kentucky “craft” distillers, so I am a little biased writing this review. However, Wilderness Trail earned that bias, because of the enjoyment I have had visiting the distillery and drinking their products. There are many things unique about this distillery, not the least being that the owners first started their business cultivating yeast strains, problem solving and consulting for other distilleries, rather than distilling their own product. Their company, Ferm Solutions, provides yeast and consulting services to many companies in the fuel and beverage alcohol businesses. It was the profits and expertise from this business that allowed them to start Wilderness Trail Distillery, and rapidly expand it into the facility that it is today.

                      Wilderness Trail Distillery is located on the outskirts of Danville, Kentucky, on a scenic property where the distillery, a new visitor center, and rickhouses have been sprouting for the last few years. The grounds are also used for many events, such as A Taste in Danville,  cruise-ins, a chili cook-off, and the Kentucky State BBQ Festival. There are also monthly “First Fridays” at the distillery, where people can come enjoy music, local food truck(s) and of course, bourbon. 

                      Wilderness Trail Distillery is easy to find. There are signs along the way, and Google maps knows where it is. There is plenty of parking, with some spaces in a paved area, and many more spaces in gravel and grass parking areas. The visitor center also houses the gift and bottle shop, and that is where tour tickets are purchased. 




                      The tour begins with a brief history of the distillery and a peek into the Ferm Solutions lab, where the business got started. The next stop is the mash tuns and fermenters (the original 4,000 gallon ones; the new 20,000 gallon ones are in a separate area). Here we learned about some of the unique processes used at Wilderness Trail. First, because of the backgrounds of the owners (one has a PhD in microbiology, the other is a mechanical engineer), things get technical pretty quickly. The mash is done precisely (as is everything here), to optimize the starch gelatinization of each of the different grains. Fermentation is meticulously controlled in open fermenters, and a sweet mash process is used. Most bourbon distilleries use a “sour mash” process, where some of the fermented mash (aka “distiller’s beer”) which has already passed through the still, now know as the backset (or stillage), is added to the fresh mash in the fermenters. This method is said to maintain consistency between batches, as well as better control the pH (the backset makes the mash more acidic), which can help control bacterial growth. At Wilderness Trail, they will have none of that, and start completely fresh every time. On their website they state "By not acidifying the mash, we are able to bring more flavors forward from the grains with a softer finish, just as in preparing a fine meal.” I think they have succeeded in their goal!


                      From the deck where the top of the mash tuns and fermenters are, we have a bird’s eye view of the stills below. They have their original compound pot still which they still use for small batches, the Harvest Rum and for the final distillations of their Blue Heron Vodka. The bourbons and rye are produced in the two column stills and their accompanying “doublers”. After adding the second column still, maximum production capacity can be up to 216 barrels per day. After visiting the stills, we then moved on to the new large (20,000 gallon) fermenters. They are similar to the smaller ones, only larger. The building that they are in also has fantastic views of the property.

                      The tour finished in the visitor center / gift shop, where we were given samples of all of the spirits: Harvest Rum, Blue Heron Vodka, Kentucky Straight Rye Whiskey, and the two Kentucky Straight single barrel bottled in bond bourbons, one with a rye mashbill, and the other with a wheated mashbill.  We then receive our souvenir glasses and were free to buy Wilderness Trail paraphernalia and spirits in the gift shop.

                      The tour guides have always been very personable and knowledgeable, and in fact, everyone who we have met at Wilderness Trail Distillery  has been great, and we have had a fantastic time whenever we have visited. A stop at Wilderness Trail Distillery is highly recommended.
