New Bourbon Releases News For November 14, 2025

New Bourbon Releases

Castle & Key Cask Strength Wheated Bourbon 2025 Edition

Castle & Key releases the 2025 edition of its Cask Strength Wheated Bourbon, now aged 7 years and bottled at 108.2 proof. The distillery released its first cask strength bourbon last year, and now it is back for 2025. Made from a mash bill of 73% white corn, 10% winter wheat, and 17% malted barley, this year’s release continues the brand’s signature wheated style with added complexity from extended aging. It is available in select states and at the Castle & Key gift shop in Frankfort, KY. SRP: $59.99–$64.99. Read the full press release here.

Castle & Key Straight Rye Finished in Extra Old Haitian Rhum Casks

The latest in Castle & Key’s experimental series, this Straight Rye Whiskey is finished for 18 months in Extra Old Haitian Rhum casks and bottled at 116.1 proof. The mash bill is 63% rye, 17% corn, and 20% malted barley. Only 1,800 cases were produced, available online in select states. SRP: $64.99–$69.99. Read the full press release here.

Garrison Brothers Announces 2025 Cowboy Bourbon

Garrison Brothers 2025 Cowboy Bourbon returns for its 11th annual release, aged 8+ years and bottled at a bold 146.4 proof. This unfiltered, uncut Texas Straight Bourbon is hand-selected by Master Distiller Donnis Todd and limited to just 10,000 bottles, with the first 1,000 released on-site in Hye, Texas on December 6, 2025. SRP is $249.99. Read the full press release here.

Little Book The Infinite: Edition II

Little Book The Infinite: Edition II from the James B. Beam Distilling Company continues the line’s annual tradition of evolving the original blend by adding new components each year. This second edition is bottled at 120.8 proof (60.40% ABV) with an SRP of $199.99. The blend includes four Kentucky Straight Bourbon components: a 22-year bourbon from Booker Noe, a 10-year bourbon from Fred Noe, a 7-year extended-fermentation bourbon from Freddie Noe, and a portion of last year’s Little Book The Infinite I. Booker’s bourbon brings oak, char, and smoke; Fred Noe’s bourbon adds rich vanilla, caramel, and dark stone fruit; and Freddie Noe’s bourbon brings brightness with fresh apple and pear. Together, they represent three generations of Beam family whiskey-making. beamdistilling.com

Heaven Hill 90th Anniversary Bourbon Release

Heaven Hill Distillery celebrates its 90th anniversary with a limited release 9-year-old Kentucky Straight Bourbon Whiskey. Crafted from Heaven Hill’s traditional Bourbon mashbill, 78% corn, 12% malted barley, and 10% rye, this 107-proof Bourbon is a blend of 70% Kentucky Straight Bourbon Whiskey and 30% Kentucky Straight Bourbon Whiskey aged in heavy char barrels. Each of the 204 barrels selected for this release was produced on December 13, 2015, marking Heaven Hill’s 80th Anniversary, and matured for nine years and eight months in Rickhouses G and H on the 4th and 6th floors. It is bottled non-chill filtered and priced at $124.99, with nationwide availability beginning October 2025. Read the press release here.

Southern Star Cask Strength Bourbon Finished in Honey Barrels

Southern Distilling Company has released the second batch of its limited-edition Southern Star Cask Strength Bourbon Finished in Honey Barrels, a 7-year-aged, 108.4-proof bourbon finished in locally sourced wildflower honey–saturated barrels. This limited expression became available November 8 at the Southern Distilling Company Tasting Room in Statesville, North Carolina, and at select ABC stores across the state. In celebration of the launch, Southern Distilling Company will serve four honey-forward cocktails at its Statesville Tasting Room, including The Buzz, made with Southern Star Double Shot and Southern Star Bourbon Finished in Honey Barrels. A limited distillery-exclusive gift bundle ($65) featuring the new Honey Barrel bourbon, barrel-aged honey, and hot honey brittle will also be available. Suggested retail price is $49.95 for a 375mL bottle. southerndistillingcompany.com

(Editor’s note: According to the distillery website, which I believe refers to the first much smaller release, the barrels used to finish this bourbon initially aged Southern Star Bourbon, then were used to age wildflower honey, and were then returned to the distillery to finish the bourbon for 12 months. It is not clear if the same process holds for this second, much larger release.)

Michter’s 20 Year Kentucky Straight Bourbon

Michter’s will release its limited Michter’s 20 Year Kentucky Straight Bourbon beginning December 1, following the brand being named “The World’s Most Admired Whiskey” for the third time by Drinks International in 2025. Approved by Master Distiller Dan McKee and Master of Maturation Andrea Wilson, this rare expression is aged two decades in new charred oak and bottled at 114.2 proof (57.1% ABV). The suggested U.S. retail price is $1,200 for a 750mL bottle. michters.com

Willett Family Estate Small Batch Bourbon

Willett Distillery has announced the release of its newest expression, the Willett Family Estate Small Batch Bourbon, a handcrafted whiskey created under fifth-generation Master Distiller Drew Kulsveen. It joins the Willett Family Estate Small Batch Rye as a younger, lower priced addition to the Family Estate Bourbon series. The small batch release is a marriage of two distinct mashbills “thoughtfully selected and blended to create a bourbon of remarkable depth and character”. They are 70% of a 72% corn / 13% rye / 15% malted barley mashbill and 30% of a 52% corn / 38% rye / 10% malted barley mashbill. Each batch is comprised of around 50 barrels, distilled at a barrel entry proof of 125, and bottled at cask strength which will vary by batch. The Willett Family Estate Small Batch Bourbon will be released in limited quantities nationwide. kentuckybourbonwhiskey.com

Doc Holliday 16 Year Cigar Blend

The World Whiskey Society has introduced the newest release in its Doc Holliday series: the Doc Holliday 16 Year Cigar Blend. This 16-year-old Kentucky Straight Bourbon Whiskey unites “three distinct cask finishes—Tokaji, Armagnac, and White Port.” Bottled at a cask strength of 62.1% ABV (124.2 proof), it was handcrafted in collaboration with master distiller Chip Tate. The Doc Holliday 16 Year Cigar Blend is available for $449 through the WWS online shop. worldwhiskey.com

(Editor’s note: In addition to working on this whiskey, Chip Tate was the founder of Balcones Distilling, and is also currently Master Distiller for Burnt Tavern Bourbon and was appointed Master Distiller for Innovation at Foley Family Wines & Spirits in January 2024.)

Milam & Greene Unabridged Bourbon Volume 4

Milam & Greene has released Unabridged Bourbon Volume 4, debuting at the distillery on November 8 with limited online quantities becoming available on November 19. Volume 4 was crafted from just eight “carefully chosen casks,” the smallest yield in the series to date. The blend combines matured Kentucky and Tennessee bourbons with Milam & Greene’s own Kentucky- and Texas-distilled whiskey featuring their signature malted rye. The full composition is:

8% — 10-year Kentucky Straight Bourbon Whiskey
10% — 9-year Tennessee Straight Bourbon Whiskey
40% — 8-year Kentucky Straight Bourbon Whiskey
23% — 7-year Kentucky Straight Bourbon Whiskey
4% — 6-year Texas Straight Bourbon Whiskey with Malted Rye
15% — 5-year Kentucky Straight Bourbon Whiskey with Malted Rye

Bottled at 118.4 proof (59.2% ABV), Unabridged Bourbon Volume 4 reflects Milam & Greene’s approach of marrying barrels aged and distilled in different climates before finishing in the Texas heat, the process they call “Texification”. SRP: $94.99 milamandgreenewhiskey.com

Copper & Kings Launches New Core Portfolio

Copper & Kings American Brandy Company, part of Bourdon Spirits Company, has unveiled a new flagship portfolio featuring three spirits that “redefine the American brandy category.” The lineup includes the Six-Year American Brandy V.S.O.P. (aged six years, 86 proof, $19.99), the Six-Year American Apple Brandy (Bottled-in-Bond) (100 proof, $24.99), and a Straight Bourbon Whiskey made from a blend of straight bourbons aged 5 to 15+ years and finished for up to three years in brandy barrels (proof not provided, $29.99). The new portfolio follows Bourdon Spirits Company’s August 2025 acquisition of Copper & Kings and is available now at the distillery in Louisville’s Butchertown neighborhood, with select distribution rolling out. copperandkings.com

Booker’s Phantom Pipes Batch 2025-04

Booker’s® Bourbon has released the final batch of 2025, Booker’s “Phantom Pipes Batch”, inspired by a maze of unused “phantom pipes” discovered in the rafters of the Boston distillery — remnants of Booker Noe’s constant tinkering and engineering experiments. The batch is bottled uncut and unfiltered at 126.4 proof with the youngest component aged 7 years, 6 months, and 15 days. It is composed of barrels from five production dates, including selections from Warehouses 3, 1, G (Waterfill), O, and 4, with the bourbons coming from the 3rd-6th floors. The SRP is $99.99. bookersbourbon.com

Wheel Horse Barrel Master Select Barrel Proof Rye

Wheel Horse Whiskey has released Wheel Horse Barrel Master Select Barrel Proof Rye, the first barrel proof rye whiskey from the brand. Batch 1 is distilled and matured in Owensboro, Kentucky, and is a blend of nine rye (95%) barrels aged between 5 years 8 months and 6 years, primarily matured in Kentucky and secondarily at Wheel Horse in Rhode Island. The barrels were hand selected by Barrel Master Stephen Corrigan. This inaugural release is non-chill filtered, limited to 1,800 bottles, and bottled at 120.4 proof with an SRP of $39.99. It is available now in about 15 states and in over 30 states online. wheelhorsewhiskey.com (Editor’s note: the price is usually slightly higher than the SRP on Wheel Horse’s website.)

Blade and Bow 30-Year-Old Kentucky Straight Bourbon

Blade and Bow has unveiled its oldest whiskey to date: Blade and Bow 30-Year-Old Kentucky Straight Bourbon, first laid to rest in the spring of 1993 in the legendary patented rickhouses of Stitzel-Weller Distillery. This limited release is a blend of liquid pulled from just 42 barrels and bottled at 54.5% ABV (109 proof), with a suggested retail price of $1,200 for a 750mL bottle.

Diageo’s Director of American Whiskey Liquid Development and Capabilities, Nicole Austin, hand-selected each barrel during a “meticulous post-maturation process”. At a certain point during maturation — before Diageo acquired Stitzel-Weller — semi-empty barrels were consolidated to maintain full contact with the wood, preserving balance and preventing over-oaking despite evaporation.

Availability begins nationwide in November 2025 and in the visitor center at Stitzel-Weller Distillery beginning Friday, 11/14, including individual pours (priced at $225) at the Garden & Gun Club. Each tasting will be presented on a custom gold tray and includes a premium glassware and keepsake items in a refined bag. Read the full press release here.

Editor’s Note: The press release states this whiskey was aged in the rickhouses at Stitzel-Weller but does not specify that it was distilled there, similar to how Diageo phrased the press release for the I.W. Harper 34-year-old. It’s implied, but not stated, and they may not know the origin of these barrels, or may not want to disclose it. Also, while I find the process of consolidating barrels during aging interesting, I do not understand how that results in “full contact with the wood, preserving balance and preventing over-oaking despite evaporation.” It does however decrease the amount of air in the barrel, which might have a beneficial effect. I would love to hear any comments on this from my friends who know more about barrel maturation that I do.

Sazerac Rye Whiskey Full Proof

Buffalo Trace Distillery has introduced Sazerac Rye Whiskey Full Proof as a permanent addition to its Sazerac Rye portfolio. Bottled at 125 proof, this new expression follows the recent debut of the brand’s 100 proof release and is said to be made possible due to the distillery’s recent and continued expansion. According to Buffalo Trace, the Full Proof release was enabled by its $1.2 billion production expansion, which includes new still houses and increased distilling capacity. The whiskey will be available beginning November 2025 in select U.S. markets for a suggested retail price of $39.99 per 750mL bottle.

Buffalo Trace is also offering a limited “Sazerac Rye Vertical Tasting” from November 14–16 featuring Sazerac Rye 90, 100, Full Proof, and Sazerac Rye 18-Year-Old from the Buffalo Trace Antique Collection. Tickets are $10 and include samples, a commemorative glass, a 200ml Sazerac Rye sample bottle, and a small bite pairing. buffalotracedistillery.com

(Editor’s note: Unfortunately, at press time, only a single ticket remained available for this tasting, but it may be worth checking since people may cancel. I had the opportunity to participate in this tasting, and there is a significant difference between all of these Sazerac Rye expressions. The new Full Proof has much more to it than the 90 proof, with a bit of a more syrupy viscuous mouthfeel and more robust flavors. It is also much sweeter than I expected. However, that was only my first taste of it, and I’ll post more about it after I have had a chance to sit down with it.)
