An Adventure In Bold Flavors

Pursuit United Double Oaked Bourbon begins with Pursuit Spirits signature bourbon blend. Once it is fully matured, the bourbon is then finished with heavily charred 36 month seasoned French Oak medium toasted staves. It is then bottled without chill filtration.

A Blend of Bourbons

Pursuit United Double Oaked Bourbon, like their signature bourbon, is a blend of bourbons from Kentucky (Bardstown Bourbon Company), Tennessee (undisclosed, but not Dickel) and New York (Finger Lakes Distilling). The individual mash bills are given on the company website.

Wood Finishing

For previous wood finished releases, Pursuit Spirits used oak cubes from a company called Innerstave. I am assuming cubes are what is being used in this Double Oaked Bourbon. However, it does say “staves” on the label, and the company makes oak products in all sizes and shapes, so staves could be possible, too. Regardless of the shape of the wood, it is submerged in the bourbon and remains in the barrel until the desired flavor profile is obtained.

Tasting Notes – Pursuit United Double Oaked Bourbon Review

Let’s taste it:

🛏 Rested for 15 minutes in a Glencairn

👉🏻Nose: Butterscotch, vanilla, toffee, dry oak, mild tannins & cherries; moderate alcohol vapor
👉🏻Taste: Buttery butterscotch, toffee, moderately sweet dark brown sugar, dry spicy oak, tannins
👉🏻Finish: Fairly pronounced white pepper spice; dry oak, tannins, hint of char; progressively dry; long with lingering spice; moderate warmth

Pursuit United Double Oaked Bourbon has a rich, enticing nose, with butterscotch, toffee, and vanilla. However, dry oak and some tannins also make themselves known, giving a bit of a contrast to the confectionary flavors. There are cherries as well, becoming more noticeable with time. The alcohol vapor is moderate, as would be expected for the 108 proof. The taste brings very similar rich flavors, with the addition of some dark brown sugar, as well. In addition, dry, somewhat spicy, oak and tannins become increasingly noticeable with each sip. Ultimately, the finish is fairly dry, with quite a bit of white pepper spice, which lasts throughout the long finish. Dry oak, tannins and a hint of char round out the flavors. Finally, I am left with a pleasant warmth, as only a bit of dry oak and char remain in my mouth.

What I Expect In A Double Oaked Bourbon

Pursuit United Double Oaked Bourbon is what I would want from a double oaked bourbon. It has plenty of rich, confectionary like flavors that come from the oak finishing. In addition, with noticeable spicy dry oak and some tannins, it lets you know that there is heavily charred French Oak in there, as well. The balance between the flavors is pretty much perfect. However, this is a different kind of Double Oaked than the one with a similar name from Woodford. That ones leans more to the richer flavors without the noticeable dry spicy wood, so be prepared for a different flavor profile.

Some purists may scoff at the Double Oak moniker, since generally that implies that a second barrel was used. However, there are many bourbons out there that are using similar immersible wood products rather than secondary barrels. Those wood products provide a more controlled and efficient finishing process, enabling one to develop their desired flavors in a relatively short amount of time. In fact, they have been used in winemaking for quite a while.

A Store Pick

One more thing to point out is that this is a store pick. Generally, I favor reviewing regular releases, since the flavor profile should be more similar to bottles that can be readily purchased. However, as this is a small batch limited release, there is going to be variability between batches. Likewise, the flavor profile should be similar across batches, although the balance will change. Therefore, this store pick should be a decent representation of the expression.
