A Tribute To Physicians Of The Prohibition Era

Ten Day Bourbon, the brand founded by three doctors to pay tribute to the medical professionals who sustained the spirit of whiskey during the Prohibition era, has recently released their first barrel strength bourbon. Furthermore, it is also their oldest bourbon. If you are not aware of the history of the brand, their name “Ten Day Bourbon” is an homage to the Volstead Act’s provision that health care professionals could prescribe 1 pint of whiskey every 10 days. You can read more about this practice in my review of their first release.

Ten Day Bourbon Surgeon’s Cut

According to the distillery: “Surgeon’s Cut is bottled at barrel strength, capturing the pure essence and robust flavors straight from the cask. Each pour offers an unfiltered, bold experience that showcases the full intensity and character of our carefully aged bourbon.”

Tasting Notes – Ten Day Bourbon Surgeon’s Cut Review

Let’s taste it:
🛏 Rested for 15 minutes in a Glencairn

👉🏻Nose: Dark cherries, sweet caramel, light honey, rye spices, oak & cedar; alcohol vapor appropriate for the proof
👉🏻Taste: Dark cherries, caramel, light honey, mild oak; light rye spices; tannins
👉🏻Finish: Considerable white pepper spice, touch of tart orange peel; hints of dark cherries; dry; tannins; subtle barrel char; dry wood; long; moderate warmth

The nose of Ten Day Bourbon Surgeon’s Cut starts out fairly sweet, with dark cherries, sweet tan caramel, light honey and rye spices. Just the right amount of oak and cedar round out the full flavors. The alcohol vapor is appropriate for the proof.

Many of the same flavors continue into the taste, with dark cherries, caramel, light honey and mild oak. However, later on, the profile changes course. Tannins appear and increase and light rye spices become more evident. Continuing into the finish, there is considerable white pepper spice with a touch of tart orange peel and dark cherries. The tannins increase and the mouthfeel becomes progressively dry. As time goes on, dry wood and subtle barrel char become more evident and continue into the very long finish. Finally, I am left with a pleasant warmth in my chest.

Summary

Ten Day Bourbon Surgeon’s Cut has opened up considerably a day after my initial pour. The flavors have become much more developed and full. In addition, Surgeon’s Cut has an interesting progression of flavors. From the full fairly sweet and rich flavors in its nose, I would not have suspected how dry it would become in the finish. That’s somewhat atypical for a bourbon of this age. However, Surgeon’s Cut is nonetheless an enjoyable pour. However it’s best suited for those who aren’t afraid of some tannins and spice, and who enjoy a dry finish.

Have you tried Ten Day Bourbon Surgeon’s Cut? What did you think? Cheers!🥃
