Background

Weldon Mills Distillery was founded in 2018 by Bruce Tyler and Michael Hinderliter, with Mike Norman soon brought on board as Master Distiller. While their passion is small batch bourbons, the distillery also produces a variety of additional handcrafted small batch spirits. They pride themselves on using locally sourced ingredients as well as water from the Roanoke River.

Weldon Mills Select Bourbon

Weldon Mills Select Bourbon is a North Carolina grain-to-glass bourbon made with North Carolina corn, malted wheat, and malted barley. The inclusion of malted wheat is notable, as most bourbon mash bills use unmalted wheat or rye. The bourbon is distilled in small batches and bottled at 94 proof.

Let’s taste it:

🛏 Rested: 15 minutes in a Glencairn glass

👉🏻 Nose: Moderately sweet, corn bread, creamed corn, simple syrup, hints of raspberry jam, sweet oak, touch of baking spices, unsweetened tea; pears after a few sips; alcohol vapor appropriate for proof
👉🏻 Taste: Simple syrup, cornbread, light caramel, mild tannins, mild dry oak, pears
👉🏻 Finish: Pears, caramel syrup, mild black pepper spice and some tannins; later on, increasingly dry; fairly long with lingering mild spice & char, peaches and tangerines

Bottle & Glencairn Glass - Weldon Mills Select Bourbon Review

From Sweet Cornbread To Fruit and Spice

The nose is full and sweet, with cornbread, creamed corn and a mild graininess at the forefront, with a combination of baking spices, unsweetened tea, light oak and fruits in a supporting role. With each sip and sniff, the flavors alternate a bit in dominance. The palate is also fairly sweet and similar, with cornbread leading the way, but the beginning of some dryness with hints of tannins and oak. What’s most interesting to me, is the appearance of different fruits later on. Pears, peaches and tangerines are a bit unexpected. Perhaps the malted wheat and barley are contributing those.

A Layered, Complex, Yet Easy-Drinking, 94-Proof Bourbon

Weldon Mills Select Bourbon is a surprisingly complex and layered 94 proof pour. From being cornbread and creamed corn forward initially, to the drier finish with softer sweeter fruits and a touch of citrus later on, this is a very enjoyable easy to drink bourbon. At its relatively low proof, this is a bottle that could easily disappear in an evening with friends – or while writing a review. If you are looking for a lower proof pour that has plenty of body and flavor, this is definitely one to try. Have you had Weldon Mills Select Bourbon? What did you think? Cheers! 🥃
