In Commemoration of the 250th Anniversary of the Declaration of Independence

Whiskey JYPSI Legacy Batch 3: The Declaration is the third release in the brand’s Legacy Series. According to Whisky JYPSI, the “Legacy Series is based on sourcing individual well-aged whiskey components from various origins and using cross-category blending to reconstruct a traditional mash bill rather than blending the grains before fermentation. This allows us to select from a wider portfolio of international whiskeys and ensure that each whiskey is at the exact right age and flavor profile to perfectly harmonize within this extraordinary blend.”

Whiskey JYPSI The Declaration is a tribute to the 250th anniversary of the Declaration of Independence. To that end, it was “built from a reconstructed Maryland-style rye mash bill that reinterprets the past with modern craft and reverence.” The blend includes rye, corn, and malt whiskeys. In addition, to further associate with early days of our country, the Indiana rye component was finished in apple brandy barrels from George Washington’s Mount Vernon Distillery.

Tasting Notes – Whiskey JYPSI Legacy Batch 3: The Declaration Review

Let’s taste it:

🛏 Rested: 15 minutes in a Glencairn

👉🏻 Nose: Complex and moderately sweet with dark cherries and sweet apples; sweet cherry Kool-Aid is more evident later on; vanilla and toffee; hints of black licorice, tart orange peel and rye bread; alcohol vapor is noticeable but appropriate for the proof.
👉🏻 Taste: Quite sweet, with sweet apples and cherries; mild dry oak, rye spices, tart citrus, and caramel.
👉🏻 Finish: Lingering sweetness, citrus and caramel; the sweetness fades as the finish becomes increasingly dry and spicy later on, with capsaicin spice, mild rye spices and black licorice, lingering tart citrus, char and dry wood; fairly long with dryness on my tongue.

Summary

Whiskey JYPSI Legacy Batch 3: The Declaration is a complex whiskey right from the start. There are a multitude of layered flavors in the nose, such that every sniff highlights a different note. Aromas include a nice mix of confectionery notes, sweet and tart fruits, and a variety of spices. There are even a few crumbs of rye bread tossed in, as well.

While the nose is moderately sweet, the palate takes that sweetness up a notch with a similar mix of flavors. The finish then shifts direction, becoming increasingly dry and spicy, and it lasts for quite some time.

Conclusion: Whiskey JYPSI Legacy Batch 3: The Declaration Review

Given the mix of whiskeys in the blend and the use of apple brandy barrels to finish the Indiana 95/5 rye, the level of complexity here does not come as a surprise. I’m assuming the mature corn whiskey contributes sweetness along with vanilla and toffee notes, while the malt and apple brandy barrels likely play a role in some of the sweeter fruit characteristics. This whiskey has definitely achieved its goal of being a Maryland-style rye, balancing the spiciness of rye with the sweetness of corn, along with much more.

All in all, it adds up to a very enjoyable pour. If you’re looking for a deliciously complex whiskey that changes a bit with each sip, look no further. This blend of rye, corn, and malt whiskeys delivers a unique combination of flavors that you will enjoy. Have you had Whiskey JYPSI Legacy Batch 3: The Declaration? What did you think? Cheers!🥃
