The World Whiskey Society

From the brand: “Established in 2020, the World Whiskey Society (WWS) comprises an ultra-premium collection of rare expressions previously unavailable to even the most sophisticated whiskey enthusiasts. WWS scours the globe far and wide with a singular goal in mind – uniqueness – before selecting a distillery partner to join WWS. Or they may choose to release something completely new by finishing small-batch American bourbon in exotic oak barrels from Japan. Whether it is the Classic Collection, the Reserve Collection, the tributes to Doc Holliday, or the Diamond Collection, WWS offers whiskies for everyday enjoyment and moments of celebration.”

World Whiskey Society Doc Holliday Bottled-in-Bond Bourbon

Doc Holliday Bottled-in-Bond Bourbon is the latest addition to the World Whiskey Society’s Doc Holliday line. The mash bill and age are undisclosed, although as it is a Bottled in Bond Bourbon, it must be at least 4 years old.

This bourbon was distilled at the Scissortail Distillery in Moore, Oklahoma. I can’t find much recent information about them. In addition, a Google search does not turn up any website and their last social media posts were in mid 2023. So, they may no longer exist. If you know anything about this distillery, please let me know!

Tasting Notes – World Whiskey Society Doc Holliday Bottled-in-Bond Bourbon Review

Let’s taste it:

🛏 Rested for 15 minutes in a Glencairn

👉🏻Nose: Raspberry jam, cherries, tangerines; light caramel, butterscotch & honey; light cloves; alcohol vapor greater than expected for the proof
👉🏻Taste: Mild honey sweetness, raspberry jam, raisins, anise
👉🏻Finish: Capsaicin spice, jam, dry later on; mild barrel char; enduring spice; fairly long; pleasant warmth

The nose of Doc Holliday Bottled-in-Bond Bourbon is fairly fruit forward, with raspberry jam, sweet cherries, and tangerines. Some sweetness comes from light honey, caramel, and butterscotch, and there’s also some spice from mild cloves. The butterscotch and caramel become more noticeable as I acclimate to the more dominant fruit. The alcohol vapor seems somewhat greater than expected for the proof.

The taste brings a mild honey sweetness, with a hint of raisins and anise, which appears later on and lingers. Moderate capsaicin spice develops and continues to grow throughout the fairly long finish, yet the raspberry jam also lingers but gradually fades. Further along in the finish, the mouthfeel becomes increasingly dry, and mild barrel char becomes evident with the spice staying to the very end. I am left with a pleasant warmth.

Summary – World Whiskey Society Doc Holliday Bottled-in-Bond Bourbon Review

This bourbon has a nice transition from fruit to spice. It is not overly complex, but is an enjoyable enough pour. It is a bit unusual in that the more characteristic bourbon flavors are fairly subdued, taking a backseat to the fruit and spice. If you’re a fan of a fruit forward bourbon with a nice spicy finish, then this is one you’ll want to give a try. Have you had it? What did you think? Cheers!🥃
